Broccoli Salad

from Joyce [nee Hodson] – old high school friend of Eva’s

Broccoli, cut small + toasted flaked almonds.

For dressing:

  • ½ c. sugar
  • ¼ c. oil
  • ¼ c. vinegar
  • 2 tbsp. Dijon mustard

I make the dressing ahead and store in fridge. Just shake up to use. An instant salad! Dressing can be used on other green salads.

  1. Versatile dressing – but use less sugar. To the broccoli I add onions (red or green) and seeds (sunflower, pumpkin) and Craisins. COLOURFUL COLE SLAW – use the bag from Independent (Dole) and add green onions and slivered red pepper. Yum…
