Turkey Chow Mein

Vi Shevkenek – Christmas ’74

  • 2 tbsp. butter
  • 4 tbsp. minced onion
  • 1 c. whole button mushrooms
  • 1 ½ c. shredded cooked turkey
  • 1 c. diced celery
  • 1 ½ c. meat stock or water
  • 2 tbsp. soya sauce
  • 1 tbsp. sugar
  • 1 ½ tbsp. corn starch
  • 3 tbsp. cold water

Brown the onion and mushrooms in butter. Add the turkey, celery, meat stock or water, soya sauce and sugar and simmer for 15 mins. Blend the cornstarch and cold water, then stir into meat mixture. Cook until slightly thickened and clear. Serve hot over Chow Mein noodles. Makes 4 servings.

Pork Chops

Joerdyn Waller

  • 1 c. onion, chopped
  • 6 pork chops
  • ½ c. ketchup
  • ¼ c. brown sugar
  • 3 tbsp. white vinegar
  • soy sauce
  • salt and pepper

Brown chops and put in roaster. Spread with onions and the rest of the ingredients, combined, to form sauce. Bake about 1 hour at 350.

Barbecued Spare Ribs

Marie Funk [nee Friesen] — March 10/ ‘81

  • 4 lbs. spare ribs
  • 2/3 c. unsweetened grapefruit juice
  • ½ c. brown sugar
  • 2 tsp. cornstarch
  • 1 tsp. salt
  • 1 tsp. curry powder
  • 1/8 tsp. ground allspice

Roast ribs at 325 for 1 ½ hours. Make sauce. Add sauce the last 30 mins. Close roaster for this time.

Apple Delight

Pare, core and chop 3 apples. Measure and sift into bowl:

  • 2 c. sifted flour
  • ½ tsp. salt
  • 3 tsp. baking powder
  • ½ c. sugar

Add and cut in:

  • 1/3 c. Crisco

Combine:

  • 1 slightly beaten egg
  • 1/3 c. milk

Make well in flour mixture and pour in egg, milk mixture. Mix with fork until soft dough is formed. Turn dough onto lightly floured board and knead a few seconds. Roll into rectangle ¼” thick. Spread with apples. Sprinkle with sugar and cinnamon. Roll up like jelly roll. Cut in half. Place rolls side by side in greased baking dish. Slash top at 2” intervals. Make a syrup by combining

  • 1 c. sugar
  • ½ c. water
  • 3 tbsp. butter

Boil over low heat 5 mins. Pour over apple rolls. Bake 25-30 mins. at 425. Serve with plain cream.

Apple Crisp

  • 6 apples
  • ½ tsp. cinnamon
  • ¾ c. flour
  • 4 oz. butter
  • 8 oz. brown sugar
  • 2 tsp. lemon juice
  • ¼ tsp. salt

Add half of the sugar, cinnamon, and lemon juice to the apples. Put apples into buttered baking dish. Mix all other ingredients and sprinkle on top. Bake at 350 for 45 mins. Serve with cream.

Spanish Rice and Lentil Pilaf

A complete meal; add a salad and a roll if you like. – Vi. Sept ‘95

  • ½ c. green lentils, rinsed
  • ½ c. brown rice
  • 1 can stewed tomatoes
  • 2 c. beef stock (Oxo lite in salt, I use)
  • 1 ½ tsp. dried basil
  • 1 c. shredded (low fat if possible) Cheddar cheese

In a large saucepan, combine lentils, rice, tomatoes, stock and basil. Bring to boil. Reduce heat, cover and simmer 50-60 mins or till lentils and rice are tender and most of the liquid is absorbed. Grate cheese over before serving.

Cheese Potato Quiche

from Cooking With the Horse and Buggy People
Preheat oven to 425. Press into a 9 inch pie pan:

  • 3 c. shredded raw potatoes
  • 3 tbsp. vegetable oil

Bake 15 mins or until crust begins to brown. Remove and layer on hot crust:

  • 1 c. grated Swiss or Cheddar cheese
  • ¼ c. onion
  • ¾ c. cooked, diced chicken, ham or sausage

Beat together and pour over:

  • 1 c. evaporated milk
  • 2 eggs
  • ½ teaspoon salt
  • 1/8 teaspoon pepper

Return quiche to oven and bake for 30 mins or until lightly browned.

Bran Berry Muffins

  • ½ c. bran
  • 1 c. buttermilk
  • 1/3 c. oil (canola)
  • 1 egg
  • 2/3 c. brown sugar
  • ½ tsp vanilla
  • 1 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 – 1 ½ c. blueberries or cranberries; Craisins ok (Mom and Vi used ¾ c. each of raisins and Craisins)

Let stand bran and buttermilk. Add oil, eggs, sugar, vanilla. Mix dry ingredients. Combine with other ingredients. Lastly berries. Bake in a greased tin at 375 for 15-20 mins.

notes: If using dried fruit add a little more butter milk. Opt: substitute some molasses for sugar.

Orange Oatmeal Muffins

  • 1 ½ c. sifted pastry flour or 1 ½ c. bread flour
  • 5 tsp. baking powder
  • ½ tsp. salt
  • 1/3 c. shortening
  • ½ c. brown sugar
  • 1 egg
  • 1 tbsp. grated rind of orange
  • 1 c. rolled oats
  • ¾ c. milk

Sift first 3 ingredients. Cream butter and sugar, beat egg till light and thick, add to first mixture. Add rind and rolled oats. Then add flour and milk alternately. Fill muffin tins 2/3 full, will greased and well floured. Bake in 400 oven for 20 mins.

Cottage cheese Muffins

Pat Torgerson (Al Shevkenek’s Sister) Maybe 1993?

  • 2 ½ c. flour
  • ¼ tsp. salt
  • 4 tsp. baking powder
  • 3 tsp. sugar
  • 2 eggs (or 4 yolks)
  • 1 c. cottage cheese
  • 1 c. buttermilk
  • 1/3 c. oil

Mix oil, salt, sugar, cottage cheese, buttermilk. Add flour and baking powder. Grease tins well, fill ¾ full. 400 F oven for 20 mins. Note: toss together rather than mix a lot.
