Cheese Potato Quiche

Preheat oven to 425. Press into a 9 inch pie pan:

  • 3 c. shredded raw potatoes
  • 3 tbsp. vegetable oil

Bake 15 mins or until crust begins to brown. Remove and layer on hot crust:

  • 1 c. grated Swiss or Cheddar cheese
  • ¼ c. onion
  • ¾ c. cooked, diced chicken, ham or sausage

Beat together and pour over:

  • 1 c. evaporated milk
  • 2 eggs
  • ½ teaspoon salt
  • 1/8 teaspoon pepper

Return quiche to oven and bake for 30 mins or until lightly browned.
