Lemon Sponge Cake

  • 1 c. sugar
  • 1 c. flour
  • 5 eggs
  • 1 tsp. lemon juice
  • rind of one lemon
  • rind of one orange
  • 1 tsp. baking powder
  • ¼ tsp salt

Sift sugar, then measure. Sift flour, measure and sift again with salt and baking powder. Separate eggs. Beat yolks till thick and lemon coloured. Add half the sugar and lemon juice and rind. Beat egg white stiff but not dry, add remaining sugar. Then fold yolkd mixture into remaining egg whites. Fold the flour in, a little at a time. Bake 1 hour in an ungreased tube pan, oven at 325.
