Luscious Cocoanut Layer Cake

  • 2 1/3 c. pastry flour
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ¾ c. fat
  • 1 ¼ c. sugar
  • 2 eggs
  • 1 egg white
  • 2/3 c. milk
  • ¾ tsp. vanilla
  • ¾ c. cut-up shredded cocoanut

Sift together dry ingredients. Separately, cream fat, sugar, and eggs. Then add milk and vanilla. Add dry ingredients alternately with wet and mix. Fold in cocoanut and turn into 2 greased 8 inch pans. Bake at 375 for 20-25 mins. Let stand in racks for 10 mins. Turn out and peel off paper. for icing, sift 3 ½ c. icing sugar with ½ c. cocoa. Cream ½ c. fat, add 1 egg yolk and beat. Add ¼ c. hot cream and 1 tsp. vanilla.
