Turkey Chow Mein

Vi Shevkenek – Christmas ’74

  • 2 tbsp. butter
  • 4 tbsp. minced onion
  • 1 c. whole button mushrooms
  • 1 ½ c. shredded cooked turkey
  • 1 c. diced celery
  • 1 ½ c. meat stock or water
  • 2 tbsp. soya sauce
  • 1 tbsp. sugar
  • 1 ½ tbsp. corn starch
  • 3 tbsp. cold water

Brown the onion and mushrooms in butter. Add the turkey, celery, meat stock or water, soya sauce and sugar and simmer for 15 mins. Blend the cornstarch and cold water, then stir into meat mixture. Cook until slightly thickened and clear. Serve hot over Chow Mein noodles. Makes 4 servings.
