Chicken Cacciatore

Brown the chicken on medium heat. Add 3 cups onions (diced), 2 tbsp. each fresh rosemary and parsley, 2 tsp chopped garlic, ½ tsp. oregano. Cook 7-10 mins. Add 1 c. white wine and boil 3-4 mins. Stir in 1 can (14 oz.) whole tomato juice, ½ c. chicken broth, 1 c. diced mushrooms, 1 tsp. salt and ¼ tsp. pepper. Return chicken to skillet, cover and simmer 45-50 mins.
