Everybody’s Favorite Salsa

Davison Orchards, Vernon BC

Chop and Combine:

  • 8 c. peeled tomatoes
  • 4 c. sweet green and yellow peppers
  • 3 c. onions
  • 1 c. red pepper
  • 1 c. seeded jalapeno peppers

Add:

  • 2 c. cider vinegar (regular vinegar works too)
  • 4 cloves garlic, minced
  • 5 ½ oz. can tomato paste
  • 2 tbsp. white sugar
  • 1 tbsp. salt
  • 2 tsp. paprika
  • 1 tsp. oregano

In a large, heavy saucepan, bring all ingredients to a boil, stirring often. Simmer for about 1 hour or until thick enough to coat the spoon. Fill and seal jars. Process in boiling water bath for 20 mins. Pass the nacho chips!
