Crunch Almond Biscotti

Vi-1995

  • 1 ¾ c. flour
  • ¾ c. whole unblanched almonds
  • 2 ¼ tsp. baking powder
  • 2 eggs
  • ¾ c. sugar
  • ¼ c. butter, melted
  • 2 tsp. vanilla
  • ½ tsp. almond extract
  • 1 egg white, beaten

Combine flour, almonds, baking powder. Whisk eggs, sugar, butter, extracts; stir into flour mixture. On floured board, press into smooth ball. Divide in 2. Roll each into 12 inch log. Put on ungreased sheet; brush tops with egg white. Bake at 350 for 20 mins, then let cool for 5 mins.

Slice each diagonally into ½ inch thick slices; stand slices upright. Bake 20-25 mins more or till lightly golden; remove to racks; let cool. Yield: 3 ½ dozen.

Baking Powder Biscuits

  • 9 c. sifted flour
  • 4 tbsp. baking powder
  • 1 tbsp. salt
  • 1 lb. shortening
  • ¼ c. to 1/3 c. milk, depending on desired thickness of dough for either rolled out or dropped biscuits. (More milk for drop biscuits)

Prepare as for biscuits. Bake in a 450 oven for about 20 mins.

Biscuits Supreme

  • 2 c. flour (stirred but unsifted)
  • 4 tsp. single acting baking powder
  • ½ tsp. cream of tartar
  • ½ tsp. salt
  • 2 tsp. sugar
  • ½ c. shortening or butter
  • 2/3 c. milk

Mix as for biscuits. Put on ungreased baking sheet and bake at 450 for 10 mins.

Cloud Biscuits

makes 8

  • 2 c. flour
  • 1 tbsp. sugar
  • 4 tsp. baking powder
  • 1/3 tsp. salt
  • ½ c. shortening
  • 1 large egg, beaten
  • 2/3 c. milk

Mix dry ingredients. Cut in shortening. Make well in centre and add egg and milk all at once. Stir in and knead dough about 20 times by lifting and rolling with palm of hand. Roll out ¾ inch thick. Cut and bake 12-15 mins in 450 oven.
Note: May brush top with milk before baking. May add raisins or grated cheese.
