Apple Bread

Marg Shevkenek

  • 2 c. flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1/3 c. shortening
  • 1 c. sugar
  • 1 egg
  • 1 tbsp. grated orange rind
  • 1 tsp. vanilla
  • 1/3 c. orange juice
  • ¾ c. raisins
  • ¼ c. chopped nuts
  • 1 c. finely chopped apple

Sift flour, add baking powder, baking soda and salt. Cream shortening, add sugar gradually, mix well, add egg and beat well. Blend in orange rind and vanilla. Stir in dry ingredients alternately with orange juice. Add raisins, nuts and apple with last addition flour. Blend. Batter fairly stiff. 9×5” loaf pan, 350 for 1 ¼ hours.

Chocolate Zucchini Loaf (2)

Winnie Porter – When Karen lived in Lumby, Winnie Porter was her neighbour

  • ¾ c. margarine
  • 2 c. sugar
  • 3 eggs
  • 2 ½ c. flour
  • ½ c. carob powder or cocoa
  • 1 tsp. salt
  • 2 ½ tsp. baking powder
  • 1 ½ tsp. soda and 2 tsp. vanilla
  • ½ to 1 tsp. cinnamon
  • 2 c. grated zucchini
  • ½ c. milk
  • ½ to 1 c. chopped nuts

Mix ingredients together as for a regular quick loaf, then bake.

Apple-Cheese Loaf

From Newspaper

  • ½ c. shortening
  • 2/3 c. granulated sugar
  • 2 eggs, unbeaten
  • 1 c. grated apple
  • ½ c. grated sharp Cheddar cheese
  • ¼ c. chopped nuts
  • 2 c. sifted all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt

Cream shortening, gradually add sugar and cream together until light. Add eggs, one at a time, beating well after each addition. Add grated apple, cheese and nuts, mixing well. Sift together flour, baking powder, soda and salt. Add to first mixture in two additions, mixing only until all flour is moistened. Turn the thick batter into a greased loaf pan; push dough well into the corners. Bake in moderate oven 350 F, about 1 hour.

Date Loaf

  • 1 c. chopped dates
  • 1 egg
  • 4 tbsp. butter
  • 1 ½ c. boiling water
  • 1 c. brown sugar
  • 1 tsp. baking soda
  • 2 ½ c. flour
  • 1 tsp. baking powder
  • ¾ c. chipped nuts
  • 1 tsp. vanilla

Sprinkle soda over dates. Add boiling water. When cool, add other ingredients. Bake in loaf tin, moderate oven, 1 ¼ hours. (Add soda last with ½ tbsp. quite warm water).

Apricot Snacking Cake

Vi Shevkenek [nee Neufeld] March 1995. So tasty + low-fat, low (0 mg) cholesterol.
In bowl, combine:

  • 1 c. whole wheat flour
  • 2/3 c. wheat germ
  • ½ c. white flour
  • ½ c. brown sugar
  • 2 ½ tsp baking powder
  • 1 tsp. cinnamon
  • pinch salt

Whisk together and quickly stir into dry ingredients until just moistened: ¾ c. orange juice and ¼ c. vegetable oil. Then fold into batter 1 c. snipped dried apricots (about 20 apricots). Spread in a sprayed and dusted with flour 8×8” pan (or layer cake pan). For the topping, mix and spread:

  • 2 tbsp finely chopped nuts (optional)
  • 1 tbsp. wheat germ
  • 1 tbsp. brown sugar

Bake at 350 for about 20 mins or till toothpick tests clean. Cool in pan. Makes 20 pieces (not over size!). If you lightly dust icing sugar over, it is a little fancier.

Banana Nut Bread

“Good!”

  • 1 ½ c. flour
  • 2 tsp. baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ c. shortening
  • 1/3 c. honey
  • 1 egg
  • 1 tsp. vanilla
  • 1 ½ c. mashed ripe bananas
  • 1 c. whole-bran cereal
  • ½ c. chopped nuts

Sift first 4 ingredients, set aside. Measure shortening and honey into large bowl. Beat till light and fluffy, add egg and vanilla, beat well. Mix in bananas, bran, and nuts. Add other dry ingredients, mixing nly till combined. Spread in 9x5x3” loaf pan, bake in 350 oven about 50 mins or until done. Cool 10 mins before removing from pan.

Banana Bread

“Good”

  • 8 tbsp. (1 stick) butter, at room temperature
  • ¾ c. sugar
  • 2 eggs
  • 1 c. all purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 c. whole wheat flour
  • 3 large ripe bananas, mashed
  • 1 tsp. vanilla
  • ½ c. shelled walnuts, coarsely chopped

Preheat oven to 350 and grease a 9x5x3” bread pan. Cream butter and sugar; add eggs one at a time, beating well after each addition. Sift dry ingredients together (except whole wheat flour), then stir in whole wheat flour. Add to creamed mixture, mixing well. Fold in banana, vanilla and walnuts. Pour mixture into pan, bake 50-60 mins or till cake tester comes out clean – cool in pan 10 min, then in rack.

banana bread with modifications. no walnuts; mini chocolate chips + 1 c. zucchini added. delish!

Banana Cake

Norma Galvin – Gene Galvin’s sister in law (See “Baked Beans”)

  • 1 c. brown sugar
  • ½ c. shortening
  • 2 eggs
  • 1/3 c. milk
  • 1 ½ c. flour
  • ½ tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 3 bananas

Mix as for plain cake. Last of all add banana pulp with soda. Bake at 350 for 35-45 mins.
