Apple or Blueberry Flax Pancakes

“heart healthy”
Derek and Vi Shevkenek

  • 1 ¼ c. flour
  • 1/3 c. flax, coarsely ground
  • 3 tbsp. sugar
  • 1 tbsp. baking powder
  • ½ tsp. salt (less)
  • ¼ tsp. cinnamon
  • dash nutmeg
  • 2 eggs
  • 1 ¼ c. 2% milk
  • 3 tbsp. butter, melted
  • 1 c. apple or blueberry

Mix together dry ingredients. Mix remaining ingredients together separately, then add all at once to dry ingredients and mix minimally.

Vi’s Cereal Mix

July 2002

  • wheat flakes
  • triticale flakes (wheat + rye)
  • rye flakes
  • oatmeal flakes
  • steel cut oatmeal
  • barley flakes
  • millet
  • flax
  • dried cranberries (Crasins) – I usually add the dried cranberries or raisins when I cook the cereal. Here they are mixed in. (Any dried fruit works).

To steam-cook: 1 c. cereal to 2 c. water, plus a few grains of salt. Bring to a boil, then remove from heat and let stand 15 mins.

Easy Hollandaise Sauce

Barb Walker 8-8-98 (Eva’s neighbour in Vernon)
Yield: 6-8 servings

  • ½ c. sour cream
  • ½ c. mayonnaise
  • 1 tsp. dry mustard
  • 2 tsp. lemon juice

Combine all ingredients and stir over low heat until just heated through. Do not boil. Serve over broccoli or asparagus.

Hot Cakes

Hilda Friesen [Omar’s Wife] — 1984

  • 3 well beaten egg yolks
  • 1 2/3 c. buttermilk or sour milk
  • ½ c. melted butter
  • 1 ½ c. flour
  • ½ tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. sugar
  • 3 egg whites

Mix egg yolks, milk, and butter. Stir in dry ingredients and beat until smooth. Fold in egg whites.

Prairie Puffed Wheat Waffles

  • 2 tbsp. sugar
  • 3 eggs
  • 2 tsp. salt
  • 2 c. milk
  • 2 c. Prairie Wheat Puffs
  • 1 ½ c. flour
  • 2 tsp. baking powder
  • 2 tbsp. butter, melted

First soak puffed wheat in milk. Then mix together sugar, eggs and salt. Sift flour with baking powder and add to egg mixture. Combine this batter with puffed wheat and add melted butter. Bake until brown and crisp for about 3 mins. and serve at once with butter and syrup.

Waffles

Tina Driedger, Eva’s mother.
These waffles were successfully made over a camp fire on a fishing trip hundreds of miles from Eva’s + Tina’s home! They made the batter at home and took the baking powder with them separately; then completed the batter just prior to cooking the waffles in their waffle iron over the fire. Yum.

  • 2 pints milk
  • 1 c. melted butter
  • 6 eggs (beaten separately)
  • 8 tsp. baking powder
  • flour to make soft batter

Mix milk and butter, flour. Add beaten yolks, then whites. Lastly, just before baking add baking powder. Very good with 4 or 5 eggs.

Crepes

  • 4 eggs
  • 1 c. flour
  • 1 ¼ c. milk
  • salt
  • ¼ c. melted butter

Mix, fry in large pan, enjoy.
