Matrimony Cake

  • 2 1/4 c. oatmeal
  • 1 c. flour
  • 1 c. brown sugar
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 3/4  to 1 c. shortening (Grandma says 50:50 butter and margarine)

Mix all together and pat 1/2 mixture into an 8 x 8″ pan. Put date filling on top, then remaining mix on top. Bake 30-35 mins in 350C oven.

For filling:

  • 1 lb. pitted dates
  • 2 Tbsps. brown sugar
  • 1 c. water

Steam dates and water in a covered pot until soft. Stir in sugar. Add lemon juice or vanilla to flavour (optional). ( “Vanilla in cake 7-3-08”). Cool slightly.

Fudge Chocolate Cake

  • ½ c. butter
  • 1 ½ c. sugar
  • 1 tsp cream of tartar
  • ½ c. hot water
  • 2 eggs
  • 1 tsp vanilla
  • 1 ¾ c. flour
  • 2 tbsp. cocoa
  • ½ c. milk
  • 1 tsp. soda

Cream butter, add sugar, beaten eggs and vanilla. Add dry ingredients, then milk. Add soda and the hot water and mix with batter. Bake in moderate oven until done.

Queen Elizabeth Cake

Dawn Friesen, Menno and Alice’s daughter

  • 1 c. boiling water
  • 1 c. chopped dates
  • 1 tsp. baking soda
  • ¼ c. shortening
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 ½ c. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ½ c. walnuts

First add soda to dates and pour boiling water over and let cool. Cream shortening, add sugar. Beat in egg, vanilla, and salt. Add mixture of flour, baking powder and nuts alternately with date mixture. Bake at 350 for 30-40 mins in 8×12 inch pan (greased!).

For icing, boil together 5 tbsp. brown sugar, 3 tbsp. butter, 2 tbsp. cream, ½ c. coconut for 3 mins. Pour on hot cake and brown in oven under broiler.

“My Wedding Cake”

Eva Neufeld. She made her own wedding cake. But not the frosting.

  • 8 eggs
  • 4 c. sugar
  • 2 ½ c. butter
  • 2 lbs. raisins (seeded)
  • 2 lbs. currants
  • 1 lb. mixed peel
  • ½ lb. shelled almonds
  • 1 lb. dates
  • 1 c. syrup or molasses
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. almond extract
  • 1 ½ c. sour milk (or a little more)
  • 6 c. flour

Bake 3-4 hours. Optional – cherries, 3 tbsp. jam and a little water.

Dragon Cake

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 ½ c. milk
  • ½ c. margarine, softened
  • 1 tsp. vanilla
  • 2 eggs
  • ¼ c. unsweetened cocoa
  • ½ c. mashed ripe bananas
  • ½ c. cherries

In bowl combine flour, sugar, and baking powder, Add milk, margarine and vanilla. Beat on low till combined. Beat on high for 2 mins. Add eggs and beat for 2 minutes more. Divide batter into thirds. In one third add mashed bananas and fold in. In another third add cocoa powder and combine. In remaining third add cherries. Pour each into a greased and floured 9 inch baking pan. Bake at 375 for 20-25 minutes or till toothpick comes out clean. Cool on wire rack for 10 minutes. Remove from pans and cool thoroughly. Frost with fudge icing.

Pound Cake

from Clipping

  • 1 cup butter or margarine, softened
  • ¾ c. granulated sugar
  • 1 tsp. vanilla
  • ½ tsp. grated lemon peel
  • 3 eggs
  • 1 ½ c. all purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • icing sugar

Preheat oven to 350. Cream butter or margarine and sugar until light and fluffy, about 3-5 mins at medium speed of electric mixer. Add vanilla, lemon peel and eggs (one egg at a time, beating well after each). Sift together flour, baking powder and salt; stir into mixture. Grease the bottom only of a 9x5x3 inch loaf pan; fill with batter. Bake at 350 for 50 minutes or until done. Cool in pan. Garnish with sifted icing sugar lightly on top.

Spice Cake

  • 2 c. flour
  • 4 tsp. baking powder
  • ¼ tsp. salt
  • ½ c. butter
  • 1 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. cloves
  • 2 tbsp. molasses
  • ½ c. milk

Bake for 25 mins.

Jello Cake

  • 2 ¼ c. flour
  • ¼ tsp. soda
  • ¼ tsp. salt
  • 3 tsp. baking powder
  • ½ c. margarine
  • 1 c. sugar
  • 1 pkg jello (any red)
  • 3 eggs unbeaten (one at a time)
  • 1 c. milk

This is a big cake.

Swiftning Happy Birthday Cake

Preheat the oven to 375 and line 9” cake pans with waxed paper.

  • ½ c. shortening
  • 2 ½ c. sifted cake flour
  • 1 ½ c. sugar
  • 4 tsp. double-acting baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 1 tsp. vanilla
  • 2 eggs

Place shortening in bowl. Sift dry ingredients. Add 2/3 c. milk and vanilla. Beat 2 mins on No. 3 speed. Add eggs and remaining milk, then beat 2 more mins. Pour into pans. Bake 30 mins.

Sophie Lesk’s Famous Chocolate Cake

  • 2 squares Baker’s chocolate
  • ¼ lb. butter
  • 2 c. brown sugar
  • 2 c. flour (scant)
  • 3 eggs
  • 1 c. buttermilk or sour milk
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Melt chocolate and cream butter with same. Then add sugar, eggs, milk, and flour, and vanilla. Beat for 5 mins. Add baking soda and beat in until mixed well. Bake in moderate oven for ½ hour or a little longer.
