Honey Cookies

Hilda Friesen [Omar’s Wife]

  • 1 c. honey
  • 1 ½ c. sweet cream
  • 1 c. butter or margarine
  • 1 ½ c. sugar
  • 2 c. Roger’s Golden syrup
  • 1 tsp. star anise seed
  • 3 tsp. baking soda
  • 3 eggs
  • flour to make a soft dough

Roll in small balls and bake at 375 for 10 mins.

For frosting, boil together 1 c. sugar and 4 tbsp. water till it just barley threads; pour over one slightly beaten egg white and beat till almost marshmallow consistency. Then dunk tsp of cookie in frosting and smooth off with fingers.

Dad’s Cookies

Kay Hendricks [nee Neufeld – Jac’s sister]

  • 2 c. brown sugar
  • 1 c. butter
  • 2 beaten eggs
  • 1 tsp. vanilla
  • 1 ½ c. cocoanut
  • ½ c. crushed walnuts
  • 2 cups rolled oats
  • 2 cups flour
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ¼ tsp. salt

Cream together sugar, butter, and eggs. Add vanilla. Mix in rest of ingredients and roll. Make balls of the dough and flatten them with the bottom of a tumbler dipped in flour. Mark with fork to make design. Bake at 425 for 8-10 mins.

Holiday Fruit Cookies

Mix:

  • 1 c. soft shortening
  • 2 c. brown sugar
  • 2 eggs

Stir in ½ c. sour milk or buttermilk. Sift together and stir in:

  • 3 ½ c. sifted flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 ½ c. broken pecans
  • 2 c. candied cherries
  • 2 c. cut-up dates

Chill 1 hour, then bake at 400 for 8-10 mins. (“Form into rolls and chill”)
Yield: 6 dozen cookies

White Cookies

“Good tender”

  • 3 eggs
  • 1 ½ c. sugar
  • 1 c. butter
  • ½ c. sour cream
  • 4 c. flour
  • 4 tsp. baking powder
  • 1 tsp. soda
  • ½ c. raisins

Roll out, put on pans.

Jam Jams

“good”

  • 1 c. brown sugar
  • 1 c. shortening
  • 2 eggs (well beaten)
  • 6 tbsp. corn syrup
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 3-4 c. flour

Cream sugar and shortening, add eggs, asyrup, vanilla. Sift dry ingredients and beat to right thickness (to roll). Chill. Roll, cut and bake in hot oven. (360 for 6-7 mins). Make into jam sandwiches using any variety of jam as filling. Plum jam or prune plum jam, or raspberry jam is very nice.

Molasses Cookies

Mix with a whisk or a spoon:

  • 1 ¼ c. white sugar
  • 1 c. vegetable oil
  • ¾ c. molasses (I use cooking molasses)
  • 2 large eggs

Add:

  • 4 ¼ c. flour (don’t sift)
  • 1 tbsp. ginger
  • 1 ½ tsp. cinnamon
  • 1/8 tsp. cloves
  • 1 ½ tsp. baking soda
  • salt – only about ¼ tsp.

(I put the flour in first, add the rest, and stir into the flour before mixing with a spoon into the liquids). Persist if it seems too dry but if necessary, add a few drops water. Chill 15 mins or as long as you want. Form large balls (ice cream scoop!). Roll in sugar. Bake on a lightly greased sheet about 13 mins, or until golden. Don’t overbake! Slightly underbaked is best. Cool on rack. (350 or higher)

Spiced Cherry Bells

  • 3 c. flour
  • ½ tsp. baking soda
  • 1 tsp. ginger
  • ½ tsp. instant coffee
  • 1 c. butter
  • 1 ¼ c. brown sugar
  • ¼ c. corn syrup
  • 1 unbeaten egg
  • 1 tbsp. cream

Roll out dough, 1/3 at a time, to 1/8 inch thickness. Cut into 2 ½ inch rounds. Place ½ tsp filling in centre of each round. Shape into bell by folding sides in, making top narrower. Place a cherry at each end.

For filling, combine 1/3 c. brown sugar, 1 tbsp. butter, 3 tbsp. cherry juice. Stir in 1 ½ c. pecans (chopped finely). Mix.

Bake at 360 about 6 or 7 minutes.

Rich Cookies

  • 1 ½ c. butter
  • 2 eggs
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • flour enough to make a soft dough

Pinch off small pieces, form balls and press down with fork.

  • as much flour as needed
  • 2 eggs
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 ½ tsp. baking powder
  • ½ c. chopped nuts

Butterscotch Cookies

  • 4 eggs
  • 3 c. brown sugar
  • 1 c. lard (1/2 Crisco, ½ lard)
  • 1 tbsp. cream of tartar
  • 1 tbsp. soda
  • salt
  • vanilla
  • enough flour to make a medium soft dough

Roll into rolls and refrigerate. Slice and bake at 350 for about 5 mins.
