Matrimony Cake

  • 2 1/4 c. oatmeal
  • 1 c. flour
  • 1 c. brown sugar
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 3/4  to 1 c. shortening (Grandma says 50:50 butter and margarine)

Mix all together and pat 1/2 mixture into an 8 x 8″ pan. Put date filling on top, then remaining mix on top. Bake 30-35 mins in 350C oven.

For filling:

  • 1 lb. pitted dates
  • 2 Tbsps. brown sugar
  • 1 c. water

Steam dates and water in a covered pot until soft. Stir in sugar. Add lemon juice or vanilla to flavour (optional). ( “Vanilla in cake 7-3-08”). Cool slightly.

O’Henry Bars

Hilda Friesen

  • 1 c. brown sugar
  • ½ c. butter
  • ½ c. milk

Bring to boiling point. Remove from heat. Add:

  • 1 c. graham wafers (broken)
  • 1 c. nuts
  • 1 c. cocoanut

Arrange whole wafers in bottom of pan 9×12. Cover with filling. Cover again with whole graham wafers. Cover with icing.

Pumpkin Pie Squares

  • 1 c. whole wheat flour
  • ½ c. oatmeal
  • ½ c. brown sugar
  • ½ c. butter
  • 2 c. pumpkin puree
  • 13 oz. evaporated milk
  • 2 eggs
  • ¾ c. white sugar
  • ½ tsp. cinnamon
  • ½ tsp. ginger
  • ½ tsp. cloves
  • ½ c. walnuts
  • ½ c. brown sugar
  • 2 tbsp. butter

Mix first four ingredients until crumbly and press into a 13” by 9” cake pan. Bake at 350 F for 15 mins. Combine puree, milk, eggs, brown sugar, cinnamon, ginger, and cloves and pour over crust and bake until it begins to set. Recipe says 20 mins but I usually bake it much longer. If you put the topping (combined walnuts, brown sugar, and butter) on too soon, it will sink to bottom. After topping has been sprinkled on top, bake 15 mins more or until pumpkin is completely set.

Marshmallow Delight

Vi’s all-time favourite!!

  • ½ c. margarine
  • 2 pkg. butterscotch chipits
  • ¾ c. peanut butter
  • 1 pkg. miniature marshmallows

Melt together margarine and chipits. Stir in peanut butter. Pour over marshmallows, mix, and press into a shallow pan. Chill in the fridge and then slice into bars.

Date Torte

Marie Funk (nee Neufeld)

Combine 1 lb. dates (cooked) with ½ lb. walnuts. Beat well and add 4 egg yolks. Sift, then measure 1 cup flour. Resift with:

  • 1 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. salt

Add sifted mixture to date and nuts. Add 1 tsp. vanilla. Beat stiff 4 egg whites. Fold lightly into first mixture. Turn into well-greased shallow pan. Bake in slow oven at 325 for 50-60 mins. When cold cut into fingers and roll in powdered sugar.

Chinese Chews

  • 2 eggs
  • 1 c. white sugar
  • ¾ c. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. vanilla
  • 1 c. dates
  • 1 c. raisins
  • ¾ c. walnuts

Beat eggs until foamy. Beat in sugar. Add sifted flour, baking powder, and salt. Add vanilla. Mix with fruit and spread in buttered pan 8 by 8 inches. Bake at 350 for 30 mins. Cut in squares while warm and if you wish roll in icing or fruit sugar.

Butter Tart Squares

Vi Shevkenek [nee Neufeld]  “for my Mom!”

  • ½ c. margarine
  • 1/3 c. brown sugar
  • 1 ¼ c. flour

Crumble together above ingredients. Press into a 9×9” pan. Bake at 350 for 10 mins.

  • 2 eggs
  • 1 c. brown sugar, packed
  • ¼ c. flour
  • ¾ tsp. baking powder
  • ¼ tsp. salt
  • 1 ½ c. raisins
  • ½ c. walnuts, chopped (I don’t add these)

Beat eggs and the brown sugar till light and thick. Add rest of ingredients and stir. Spread over bottom layer. Bake at 350 for 30 mins or until centre is almost firm. Cut when cool.

Puffed Wheat Chews

  • 2 tbsp. butter
  • 2 tbsp. cocoa
  • 2/4 c. brown sugar
  • 3 tbsp. Roger’s golden syrup
  • vanilla
  • 8 c. puffed wheat

Cook together for 4 mins and pour over puffed wheat. (Form into balls or bars.)

Honey Popcorn Balls

  • ¾ c. honey
  • 3 quarts popcorn
  • 1 tsp. salt
  • ¾ c. sugar
  • ¼ c. H2O

Cook sugar, water, and salt to the very brittle stage. Add honey, slowly stirring until blended. Cook up again. Pour over popcorn and form into balls. Wrap in waxed paper.

Puffed Wheat or Popcorn Balls

Mrs. Lutz (who is this?)

  • 1 c. sugar
  • ½ c. corn syrup
  • ½ c. water
  • ¼ tsp. salt

Mix above ingredients in large pan. Stir until sugar dissolves. Cook slowly until small bit dropped in cold water forms hard ball (not too brittle). Remove from fire. Add:

  • 2 tbsp. butter
  • 1 tsp. vanilla

Pour over 2 quarts (11 cups) puffed wheat. Stir well. Cool. With buttered hands press into balls. Yield: 20 (like tennis balls).
