Chocolate Syrup

  • 1 c. cocoa
  • 2 c. sugar
  • 1/8 tsp. salt
  • 2 c. hot water

Stir over moderate heat until dissolves. Simmer 3 mins. Add 1 tbsp. vanilla. Beat with beater. Yield – 1 qt. syrup. Store in covered jars in a cool place.

Fudge Chocolate Cake

Karen Waller [nee Neufeld] – “very good”

  • ½ c. butter
  • 1 ½ c. sugar
  • 1 tsp cream of tartar
  • ½ c. hot water
  • 2 eggs
  • 1 tsp vanilla
  • 1 ¾ c. flour
  • 2 tbsp. cocoa
  • ½ c. milk
  • 1 tsp. soda

Cream butter, add sugar, beaten eggs and vanilla. Add dry ingredients, then milk. Add soda and the hot water and mix with batter. Bake in moderate oven until done.

Dragon Cake

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 ½ c. milk
  • ½ c. margarine, softened
  • 1 tsp. vanilla
  • 2 eggs
  • ¼ c. unsweetened cocoa
  • ½ c. mashed ripe bananas
  • ½ c. cherries

In bowl combine flour, sugar, and baking powder, Add milk, margarine and vanilla. Beat on low till combined. Beat on high for 2 mins. Add eggs and beat for 2 minutes more. Divide batter into thirds. In one third add mashed bananas and fold in. In another third add cocoa powder and combine. In remaining third add cherries. Pour each into a greased and floured 9 inch baking pan. Bake at 375 for 20-25 minutes or till toothpick comes out clean. Cool on wire rack for 10 minutes. Remove from pans and cool thoroughly. Frost with fudge icing.

Sophie Lesk’s Famous Chocolate Cake

  • 2 squares Baker’s chocolate
  • ¼ lb. butter
  • 2 c. brown sugar
  • 2 c. flour (scant)
  • 3 eggs
  • 1 c. buttermilk or sour milk
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Melt chocolate and cream butter with same. Then add sugar, eggs, milk, and flour, and vanilla. Beat for 5 mins. Add baking soda and beat in until mixed well. Bake in moderate oven for ½ hour or a little longer.

Carnation Milk Fudge

  • 2 tbsp. butter
  • 2/3 c. (or small can) carnation milk
  • 1 2/3 c. white sugar
  • ½ tsp. salt
  • 2 c. miniature marshmallows (4 oz.)
  • 1 ½ c. semisweet chocolate chips
  • 1 tsp. vanilla
  • ½ c. chopped nuts

Mix butter, milk, sugar, and salt in pan over heat. Bring to boil, cook 5 minutes stirring constantly. Remove from fire. Add all other ingredients and stir till marshmallows milt. Pour into buttered 8×8” pan. Cool and cut in squares. Optional – decorate top with nuts or as desired.

Jello Pudding Fudge

  • 1 pkg. (4 oz.) Jello Chocolate Pudding (cooking kind)
  • 2 tbsp. butter
  • ¼ c. milk
  • 1 ½ c. sifted icing sugar
  • ¼ c. chopped nuts

Combine pudding mix, butter and milk. Bring to a full boil, boil gently 1 minute, stirring constantly. Remove from heat. Quickly blend in sugar. Add nuts. Pour into greased 8”x4” pans. Cool; then cut into squares.

Turtles (Nut Caramel)

  • 1 c. heavy cream
  • ½ c. milk
  • ½ c. sugar
  • ½ c. yellow sugar
  • ¾ c. light corn syrup
  • dash of salt
  • ½ tsp. vanilla
  • ½ c. chopped almonds (lightly toasted)
  • 2 tbsp. butter

First mix the milk and cream. The mix ¾ of this mixture with the sugars, syrup, and salt. Bring to a boil over medium heat, stirring to dissolve sugar. Set candy thermometer in pot and cook syrup, stirring occasionally to 234 F (soft ball stage). Now very slowly stir in the ¾ c. remainder of cream mixture, so that mix continues to boil. Cook stirring occasionally till 244 F (firm ball stage). Remove from heat, stir in vanilla and butter.

Turtles – omit the almonds (above) but do arrange ¾ lb. of pecans (in 3’s) on greased baking sheet. Dribble caramel over these. When cool, melt choc. (1 c.) chips (semi-sweet) over hot water (being careful not to get it too hot as choc. will turn whitish.) Spoon over carmel turtles. Cool and store in cool, tight container (36 turtles).

Chocolate Chip Cookies

  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. white sugar
  • ½ c. brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2/3 c. shortening
  • 1 c. chocolate chips (or 6 oz.)

Bake at 375 for 10-12 minutes.

Chocolate Fudge Cake

  • 2 c. sifted flour
  • 2 tsp. baking powder
  • ½ tsp soda
  • ¼ tsp salt
  • ½ c. butter for shortening
  • 1 c. brown sugar
  • 2 well-beaten eggs
  • 3 squares Baker’s chocolate
  • 1 ¼ c. milk
  • 1 tsp. vanilla
  • 2 egg whites

Sift flour once, measure, add baking powder and soda and salt and sift together 3 times. Cream butter thoroughly, add sugar gradually and cream together till light and fluffy. Add egg yolks and chocolate, then add flour and milk, add vanilla. Fold in egg whites. Bake in greased tins 30 mins.

Chocolate Cake

  • ¼ lb. margarine
  • 1 c. sugar
  • 1 egg
  • 3 tbsp. cocoa

Mix above ingredients, then alternate 1 c.  sour milk (containing 1 tsp. soda) with 1 c. flour
