Matrimony Cake

  • 2 1/4 c. oatmeal
  • 1 c. flour
  • 1 c. brown sugar
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 3/4  to 1 c. shortening (Grandma says 50:50 butter and margarine)

Mix all together and pat 1/2 mixture into an 8 x 8″ pan. Put date filling on top, then remaining mix on top. Bake 30-35 mins in 350C oven.

For filling:

  • 1 lb. pitted dates
  • 2 Tbsps. brown sugar
  • 1 c. water

Steam dates and water in a covered pot until soft. Stir in sugar. Add lemon juice or vanilla to flavour (optional). ( “Vanilla in cake 7-3-08”). Cool slightly.

Date, Nut and Raisin Rice Pudding

  • 2 c. cooked short grain rie
  • 2 whole eggs
  • ¼ c. raisins
  • ¼ c. dates, chopped
  • ¼ c. pecans, chopped
  • 3 tbsp. sugar
  • 1 ¼ c. Pacific Milk and 1 ¼ c. water
  • ¼ tsp. salt
  • 1 tsp. vanilla
  • 1 tbsp. melted butter
  • 1/8 tsp. nutmeg

Sweeten freshly cooked hot rice to taste using ¼ c. sugar, or more. Place rice in buttered 2-quart casserole. Combine custard ingredients. Beat eggs slightly. Add milk, butter, sugar, vanilla, nutmeg, salt and dates, pecans and raisins. Pour over rice. Blend together lightly. Place baking dish in pan of hot water. Bake in slow oven, 325, for 1 hour or until knife inserted near centre comes out clean Serve hot or cold with or without lemon sauce. Makes 6-8 servings.

Date Oatmeal Cookies

  • 2 ½ c. oats
  • 2 ½ c. flour
  • 3 tsp. baking powder
  • ¼ tsp. salt
  • 1 c. sugar (1/2 white; ½ brown)
  • ½ c. shortening
  • ½ c. butter
  • ½ c. milk

For filling:

  • 1 lb. dates
  • 2 c. water
  • ½ c. sugar
  • 1 tsp. vanilla (or lemon juice)

Vi’s note: This filling is enough for 2 times dough recipe.
Oven at 400; bake 7-8 mins.

Queen Elizabeth Cake

  • 1 c. boiling water
  • 1 c. chopped dates
  • 1 tsp. baking soda
  • ¼ c. shortening
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 ½ c. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ½ c. walnuts

First add soda to dates and pour boiling water over and let cool. Cream shortening, add sugar. Beat in egg, vanilla, and salt. Add mixture of flour, baking powder and nuts alternately with date mixture. Bake at 350 for 30-40 mins in 8×12 inch pan (greased!).

For icing, boil together 5 tbsp. brown sugar, 3 tbsp. butter, 2 tbsp. cream, ½ c. coconut for 3 mins. Pour on hot cake and brown in oven under broiler.

Date Torte

Marie Funk (nee Neufeld)

Combine 1 lb. dates (cooked) with ½ lb. walnuts. Beat well and add 4 egg yolks. Sift, then measure 1 cup flour. Resift with:

  • 1 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. salt

Add sifted mixture to date and nuts. Add 1 tsp. vanilla. Beat stiff 4 egg whites. Fold lightly into first mixture. Turn into well-greased shallow pan. Bake in slow oven at 325 for 50-60 mins. When cold cut into fingers and roll in powdered sugar.

Chinese Chews

  • 2 eggs
  • 1 c. white sugar
  • ¾ c. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 tsp. vanilla
  • 1 c. dates
  • 1 c. raisins
  • ¾ c. walnuts

Beat eggs until foamy. Beat in sugar. Add sifted flour, baking powder, and salt. Add vanilla. Mix with fruit and spread in buttered pan 8 by 8 inches. Bake at 350 for 30 mins. Cut in squares while warm and if you wish roll in icing or fruit sugar.

Snow Balls (Radio)

“Good”

  • ½ c. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ¼ c. butter
  • 1 c. brown sugar
  • 1 egg (beaten slightly)
  • 2 tsp. grated orange rind
  • 1 tsp. vanilla
  • 1 c. chopped dates

Bake in 8” pan at 350 for 25 minutes. Cool slightly. Cut in squares and roll into balls. Make a mixture for ¾ c. icing sugar, 1 tbsp. soft butter, and 5 tbsp. water. Roll balls in mixture and then in crushed cocoanut; store in tight tin.

Date Loaf

  • 1 c. chopped dates
  • 1 egg
  • 4 tbsp. butter
  • 1 ½ c. boiling water
  • 1 c. brown sugar
  • 1 tsp. baking soda
  • 2 ½ c. flour
  • 1 tsp. baking powder
  • ¾ c. chipped nuts
  • 1 tsp. vanilla

Sprinkle soda over dates. Add boiling water. When cool, add other ingredients. Bake in loaf tin, moderate oven, 1 ¼ hours. (Add soda last with ½ tbsp. quite warm water).

Dream Cake

For crumb layer:

  • ½ c. butter
  • 1 c. flour
  • 3 tbsp. icing sugar

For topping:

  • 2 eggs
  • 1 c. white sugar
  • 1/8 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • ½ c. dates
  • 1 c. walnuts

Mix crumb layer and spread into bottom of pan. Blend topping ingredients and spread on top of crumb mixture. Bake in 375 oven for 15-20 minutes.

Date Squares

Rub into crumbs and press into 8×8” pan:

  • 1 ½ c. flour
  • ½ c. butter
  • 1 tsp. baking powder
  • ½ c. white sugar
  • 1 tsp. vanilla
  • 2 egg yolks

Cook 1 c. water + 1 c. dates for filling, and spread on crumbs. For topping, combine 2 egg whites beaten stiff with 1 c. brown sugar. Sprinkle with ¾ c. slivered almonds and bake at 350 for 20 mins.
