Marmalade

  • 4 oranges
  • 1 grapefruit
  • 1 lemon

Grind together fruits. Boil about 30 mins (till fruit is soft) 1 portion of fruit to 2 portions of water. Then add equal amount of sugar to fruit and boil fast about 20-30 mins, till right consistency. Put in jars and seal.

Yo-Yo Cookies

  • ¾ c. shortening
  • 1 ¾ c. brown sugar
  • 1 tsp. soda
  • 2 tbsp. warm water
  • 2 eggs, beaten
  • 2 c. sifted flour
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 1/3 c. toasted sesame seeds
  • raspberry jam

Cream shortening and sugar. Dissolve soda in warm water and add to beaten eggs. Add flour, salt, vanilla, and sesame seeds. Drop by teaspoons onto greased cookie sheet spaced well apart (12 per cookie sheet). Bake at 175 for 8 – 10 mins. Cool slightly and put together with raspberry jam.

Jelly Busters

  • ½ c. lukewarm water
  • 1 tsp. sugar
  • 1 pkg. active dry yeast
  • 1 egg slightly beaten
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1/3 c. soft butter
  • ¾ c. scalded milk
  • 1 tsp. almond extract
  • 3 ½ to 4 c. sifted flour
  • thick jam or jelly
  • fat for deep frying
  • sugar

Measure water and add 1 tsp. sugar. Stir to dissolve. Sprinkle yeast over and let stand 10 mins. Combine egg, sugar, salt, butter, and scalded milk. Stir until butter is melted and let cool to lukewarm. Stir in almond extract and yeast mixture. Add enough of the flour to make a stiff dough. Turn out on floured board and knead until smooth and small bubbles appear under the surface. Put in greased bowl, cover with damp towel and let rise until double, about one hour. Roll dough ¼ in. thick. Cut in 2 ½ inch rounds. Top with jab and put round on top. Seal. Let rise 30 mins. Heat fat to 375 and deep fry.

Jam

Mrs. Hooge – Grassy Lake (who is this?)

  • 6 cups slightly cooked fruit pulp
  • 4 c. sugar

Bring to a boil and stirring constantly, boil rapidly 15 mins. Put in sterilized jars and seal.

Jam Jams

“good”

  • 1 c. brown sugar
  • 1 c. shortening
  • 2 eggs (well beaten)
  • 6 tbsp. corn syrup
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 3-4 c. flour

Cream sugar and shortening, add eggs, asyrup, vanilla. Sift dry ingredients and beat to right thickness (to roll). Chill. Roll, cut and bake in hot oven. (360 for 6-7 mins). Make into jam sandwiches using any variety of jam as filling. Plum jam or prune plum jam, or raspberry jam is very nice.

Jam Squares

Vi Shevkenek [nee Neufeld]

  • 1 c. plus 2 tbsp. sifted all-purpose flour
  • 1/2 c. sugar
  • 1 tsp. b. powder
  • 1/8 tsp. salt
  • Grated rind of 1 lemon
  • 1/3 c. butter
  • 1 egg, beaten
  • 1/2 c. raspberry jam

Heat oven to 350. Grease and 8x8x2″ pan. Sift flour, sugar, baking powder and salt together into bowl. Add lemon rind and mix lightly with a fork. Add butter and cut in finely. Stir in egg with a fork. Put 2/3 of mixture in prepared pan, spread with jam. Sprinkle remaining dry mixture over jam. Bake about 25 mins or until well browned. Cool and cut into squares to serve.
