Lemon Buns

  • 2 pkgs. yeast
  • 1 c. warm H2O
  • 2 tsp. sugar
  • 1 c. scalded milk
  • 4 egg whites beaten
  • ½ c. butter
  • ½ tsp. salt
  • 4 egg yolks
  • ¾ c. sugar
  • 1 pkg. lemon pie filling

Soften yeast in warm H2O and 2 tsp. sugar. Scald milk and pour over stiffly beaten egg whites. Add softened butter and egg yolks that have been beaten with the sugar until thick and lemon coloured. To this add the yeast mixture, and add enough flour to make a soft dough. Let rise till light. Pinch off little pieces, rolling them into strips, forming figure eight. Fill the holes with lemon filling. Let rise again and bake at 350 for 20 mins or until a golden brown. Cook filling as directed on package.

Lemon Sponge Cake

  • 1 c. sugar
  • 1 c. flour
  • 5 eggs
  • 1 tsp. lemon juice
  • rind of one lemon
  • rind of one orange
  • 1 tsp. baking powder
  • ¼ tsp salt

Sift sugar, then measure. Sift flour, measure and sift again with salt and baking powder. Separate eggs. Beat yolks till thick and lemon coloured. Add half the sugar and lemon juice and rind. Beat egg white stiff but not dry, add remaining sugar. Then fold yolkd mixture into remaining egg whites. Fold the flour in, a little at a time. Bake 1 hour in an ungreased tube pan, oven at 325.

Lemon Scones

  • 2 c. flour
  • 1/3 c. sugar
  • 2 tbsp. baking powder
  • ¼ tsp. salt
  • 2/3 c. cold cubed butter
  • 2 eggs
  • 1/3 c. 10% cream
  • 2 tsp. lemon rind (or 1 tbsp., if you wish to add 1 c. blueberries to the recipe)
  • ¼ c. lemon juice

Mix dry ingredients, then cut in butter. Add remaining ingredients and stir lightly. Form into scones and spread with a glaze formed from 1 tbsp. lemon juice and 1 tbsp. sugar. Bake for 25 mins at 350.

Lemon Squares

Anna Tows – an old school friend of Eva’s

  • 1 c. brown sugar
  • ¼ c. butter
  • 1 c. flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 c. cocoanut
  • 10 soda biscuits (rolled)
  • 1 tsp. vanilla

Sift flour, baking powder, and salt. Add cocoanut, cracker crumbs, and vanilla. Then add butter and brown sugar. Mix well. Put ½ batter in pan and press firmly in shape. cover with lemon filling and add remainder. Bake in moderate oven 25 mins. Don’t remove till cool.

For Filling: (or, alternatively, use a lemon jello pie filling)

  • 1 c. cold water
  • ½ c. butter
  • 1 c. white sugar
  • 1 egg
  • 1 lemon
  • 2 tbsp. corn starch
