Quick Oat Cookies

  • ¼ c. butter
  • ¼ c. shortening
  • ½ c. brown sugar
  • 1 tsp. vanilla
  • ½ tsp. soda
  • 2 tbsp. hot water
  • ¾ c. flour
  • ½ tsp. salt
  • 1 tsp. nutmeg
  • 1 c. oats

Cream shortening, butter, brown sugar and vanilla. Mix soda with hot water and add to creamed mixture. Measure flour (without sifting) and combine with salt and nutmeg, stirring well to blend. Stir in oats. Add dry ingredients to creamed mixture. Mix well. Shape dough into 1-inch balls and place on greased baking sheets. Flatten with tines of fork and bake at 400 for 5 to 6 minutes.

Date Oatmeal Cookies

  • 2 ½ c. oats
  • 2 ½ c. flour
  • 3 tsp. baking powder
  • ¼ tsp. salt
  • 1 c. sugar (1/2 white; ½ brown)
  • ½ c. shortening
  • ½ c. butter
  • ½ c. milk

For filling:

  • 1 lb. dates
  • 2 c. water
  • ½ c. sugar
  • 1 tsp. vanilla (or lemon juice)

Vi’s note: This filling is enough for 2 times dough recipe.
Oven at 400; bake 7-8 mins.

Mother’s Oatmeal Cookies

  • 1 ½ c. sugar
  • 1 c. butter
  • 2 eggs
  • 1 c. (Roger’s Golden) syrup
  • 4 c. oatmeal
  • 3 c. flour
  • 2 tsp. baking soda

Roll in balls like marbles but do not press down.

Vi’s Cereal Mix

July 2002

  • wheat flakes
  • triticale flakes (wheat + rye)
  • rye flakes
  • oatmeal flakes
  • steel cut oatmeal
  • barley flakes
  • millet
  • flax
  • dried cranberries (Crasins) – I usually add the dried cranberries or raisins when I cook the cereal. Here they are mixed in. (Any dried fruit works).

To steam-cook: 1 c. cereal to 2 c. water, plus a few grains of salt. Bring to a boil, then remove from heat and let stand 15 mins.

Orange Oatmeal Muffins

  • 1 ½ c. sifted pastry flour or 1 ½ c. bread flour
  • 5 tsp. baking powder
  • ½ tsp. salt
  • 1/3 c. shortening
  • ½ c. brown sugar
  • 1 egg
  • 1 tbsp. grated rind of orange
  • 1 c. rolled oats
  • ¾ c. milk

Sift first 3 ingredients. Cream butter and sugar, beat egg till light and thick, add to first mixture. Add rind and rolled oats. Then add flour and milk alternately. Fill muffin tins 2/3 full, will greased and well floured. Bake in 400 oven for 20 mins.

Dad’s Cookies

Kay Hendricks [nee Neufeld – Jac’s sister]

  • 2 c. brown sugar
  • 1 c. butter
  • 2 beaten eggs
  • 1 tsp. vanilla
  • 1 ½ c. cocoanut
  • ½ c. crushed walnuts
  • 2 cups rolled oats
  • 2 cups flour
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ¼ tsp. salt

Cream together sugar, butter, and eggs. Add vanilla. Mix in rest of ingredients and roll. Make balls of the dough and flatten them with the bottom of a tumbler dipped in flour. Mark with fork to make design. Bake at 425 for 8-10 mins.

Uncooked Cookies

Mary Smart – A gal on the radio that gave recipes out, many years ago. “Before TV came out.”

  • 2 c. sugar
  • ½ c. milk
  • ½ c. margarine
  • 3 c. oatmeal
  • ½ c. cocoanut
  • ½ c. cocoa

Boil sugar, milk and margarine together for 5 minutes. Separately, mix last 3 ingredients and then add to sugar mixture. Boil another 2 mins. Add 1 tsp. vanilla. Drop on wax paper.

Lazy Daisy Oatmeal Cake

Hilda Friesen – Omar’s wife, “a great cook”

  • 1 ¼ c. boiling water
  • 1 c. quick quaker oats (uncooked)
  • ½ c. butter (softened)
  • 1 c. granulated sugar
  • 1 c. brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/3 c. flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¾ tsp. cinnamon
  • ¼ tsp. nutmeg

For Frosting:

  • ½ c. melted butter
  • ½ c. brown sugar
  • 3 tbsp. light cream
  • ½ c. chopped nutmeats
  • ¾ c. shredded coconut

Pour boiling water over oats, cover and let stand 20 minutes. Mix cake ingredients, pour into a 9 inch pan and bake at 350 50-55 minutes. When done, cover with frosting and broil till golden brown.
