Quick Oat Cookies

  • ¼ c. butter
  • ¼ c. shortening
  • ½ c. brown sugar
  • 1 tsp. vanilla
  • ½ tsp. soda
  • 2 tbsp. hot water
  • ¾ c. flour
  • ½ tsp. salt
  • 1 tsp. nutmeg
  • 1 c. oats

Cream shortening, butter, brown sugar and vanilla. Mix soda with hot water and add to creamed mixture. Measure flour (without sifting) and combine with salt and nutmeg, stirring well to blend. Stir in oats. Add dry ingredients to creamed mixture. Mix well. Shape dough into 1-inch balls and place on greased baking sheets. Flatten with tines of fork and bake at 400 for 5 to 6 minutes.

Hot Salmon Buns

Newspaper

  • 1 can salmon
  • ½ c. shredded Colby cheese
  • ½ c. chopped green onion
  • seasoned salt
  • 2 tbsp. salad dressing
  • 1 tbsp. chilli sauce
  • 4 hamburg buns or sesame rolls

Mash salmon with juice and bones. combine with cheese, onion, seasoned salt, salad dressing, and chilli sauce. Split buns or rolls. Pile mixture into buns. Wrap each in aluminum foil. Heat in oven at 350 degrees for 15 mins. Serve with a salad of quartered tomatoes in lettuce cups. Complete the meal with applesauce, oatmeal cookies, and a glass of milk. Makes four servings.

Chive Garlic Bread

  • ¼ c. butter or margarine, softened
  • ¼ c. grated Parmesan cheese
  • 2 tbsp. snipped chives
  • 1 garlic clove, minced
  • 1 loaf (1 lb.) French bread, cut into 1-inch slices

In a bowl, combine the butter, Parmesan cheese, chives and garlic. Spread on one side of each slice of bread; wrap in a large piece of heavy-duty foil. Seal the edges. Place on a baking sheet. Bake at 350 for 25-30 mins or until heated through.

Chocolate Cake

  • ¼ lb. margarine
  • 1 c. sugar
  • 1 egg
  • 3 tbsp. cocoa

Mix above ingredients, then alternate 1 c.  sour milk (containing 1 tsp. soda) with 1 c. flour

Orange Cottage Cheese Salad

  • 1 carton cottage cheese
  • 1 carton cool whip (found in the frozen prepared foods section)
  • 1 3oz. package orange jello powder
  • 1 can drained mandarine oranges

Mix thoroughly and chill, preferably overnight or for several hours.

Fresh Trout

  • green onions
  • melted butter
  • pepper
  • paprika

Clean trout, pat dry. Place 1 green onion in each fish. Close with tooth pick. Place in large dish. Brush fish on both sides with melted butter, pepper, and paprika. No salt! Cover. Allow 3 mins. per pound. Check if done in 10 mins. (Done in microwave).
